I arrived in Carmel late in the afternoon and checked into the Highlands Inn. It’s a beautiful hotel located on the cliffs overlooking the ocean. To say the view from our room was spectacular is an understatement. For dinner I had my owners drive me back to Carmel with the thoughts of having an authentic Mexican dinner at Club Jalapeno. Yes, I know the name is not very original, nor authentic, but the menu promised gastronomical delights – the menu didn’t lie.
I ordered their special margarita and opted for a high end tequila. It was the first of many amazing tastes for the night. The sharpness of the lime mixed with the deep smoky flavor of the tequila was in perfect balance. I ordered a second one as the first one was gone prior to the meal.
The chips and salsa were freshly prepared and out of this world good. My paws couldn’t grab the chips fast enough. They were warm and crisp with just the right amount of salt. And no grease in my fur. The salsa quemada was blended with such precision I didn’t think the meal could get any better. I knew I was wrong the minute my dinner came to the table.
I ordered the restaurant specialty, Oaxacan Enchiladas. The pork was marinated and cooked to a melt in your
mouth perfection. They enchiladas were rolled in fresh corn tortillas which were dipped and rolled in an authentic Oaxacan red mole. The tang and richness of the chiles and spices lingered well after the dinner was consumed. The refried beans were soft and silky and served in a fresh masa bowl. If that wasn’t enough, the cilantro and spinach rice was soft, and light. My only complaint of the entire meal was the “ensalada” It consisted of shredded cabbage and a creamy avocado and cilantro dressing. It didn’t work for me.
If you ever find yourself in Carmel -The city by the sea, Club Jalapeno is a place you must visit.
